Join IAAPA’s Food and Beverage Committee Chair, Bernie Campbell in a webinar all about sustainability in the Food and Beverage segment. It can be challenging to feed the guests who visit cultural attractions, both during the day and for special catered events – these challenges are even more pronounced when the culinary teams are looking to offer dishes that highlight sustainability and minimize impacts. Take a look behind the curtain with sustainability leaders from SSA to explore how they approach everything from local sourcing of ingredients, to recycling, composting, edible food recovery…and maybe even a small peek into the retail/ gift shop space!

Brian has a strong background in science and conservation, global experience in food production, and a love for cooking. He has a passion for sustainability in food systems, with a special interest in aquaculture and seafood production. For 8 years he worked for the Monterey Bay Aquarium’s Seafood Watch program. Now, as SSA’s Director of Culinary Sustainability, he deeply enjoys working with SSA’s talented Chefs to support their efforts coast-to-coast: from local sourcing of ingredients, to composting and recycling programs, to edible food recovery, Brian’s role is to minimize impacts from SSA’s foodservice operations. 

Brian studied marine biology and business at the University of Victoria in British Columbia, Canada, then pursued graduate studies in Aquaculture Business Management at the University of Stirling in Scotland.

Along with Bernie, Whirley has worked to pioneer the refill/souvenir container offerings for the Amusement Park and Attractions Industry.
